Fish Curry Preparation

  • Heat coconut oil in a large pot or earthen vessel over medium heat. Add the minced ginger and garlic and sauté until fragrant, about 30 seconds.
  • Add the curry leaves and green chilies. Sauté for another minute until fragrant.
  • Add the sliced onions and sauté until softened and translucent, about 5-7 minutes.
  • Stir in the chili powder, coriander powder, turmeric powder, and fenugreek powder. Sauté for 1 minute, stirring constantly, until fragrant. This helps to bloom the spices and enhance their flavor.
  • Pour in the water and add the kodampuli. Bring the mixture to a boil, then reduce heat and simmer for 5 minutes.
  • Gently add the fish pieces to the curry. Simmer until the fish is cooked through, about 8-10 minutes. Do not overcook.
  • Add the sliced tomatoes and cook for another 2-3 minutes until they soften slightly.
  • Stir in the coconut milk and salt. Simmer for a final 2-3 minutes to allow the flavors to meld. Do not boil vigorously after adding coconut milk.
  • Garnish with fresh curry leaves. Drizzle with coconut oil for added aroma and flavor.

Kappa Preparation

  • Peel the tapioca and cut it into small pieces. Place the tapioca pieces in a pressure cooker.
  • Add enough water to cover the tapioca. Cook until tender, about 2-3 whistles. Drain any excess water.
  • While the tapioca cooks, make a coconut paste: Grind the grated coconut, turmeric powder, and cumin seeds together in a small blender or food processor until smooth.
  • In a pan, heat the oil over medium heat. Add the chopped onion and green chilies. Sauté until the onion is softened.
  • Add the cooked tapioca, salt, curry leaves, and the prepared coconut paste to the pan. Mix well.
  • Cover the pan and cook for 5-7 minutes, stirring occasionally, until the tapioca is heated through and the flavors have combined.
