Ingredients
 

For the Curry Leaf Fry

  • 30 leaves Curry Leaves
  • 2 tbsp Oil coconut oil recommended, or any neutral oil

For the Spice Tempering

  • 1/4 tsp Mustard Seeds rai
  • 1 tsp Cumin cumin seeds
  • 10 gm Chickpeas bengal gram dal, split chickpeas
  • 2 tbsp Flax Seeds roasted
  • 3 Chili Pepper adjust to your spice preference; or use red chilies, green
  • 2 clove Asafoetida hing; optional, or substitute with a small clove of minced garlic

Other Ingredients

  • 1 piece Tamarind about 1 inch piece, or 1/2 teaspoon of tamarind paste
  • 1.5 tsp Salt or to taste

Instructions
 

Prepare the Curry Leaves

  • Heat oil in a pan. Add curry leaves and sauté gently until fragrant, ensuring they remain green.
  • Remove from heat and set aside to cool.

Prepare the Spice Tempering

  • Heat the remaining oil in the same pan. Add mustard seeds and cumin seeds; allow them to splutter.
  • Add bengal gram dal and sauté until lightly browned.
  • Stir in roasted flax seeds and green chilies. Sauté for a minute.
  • Add asafoetida (or garlic) and sauté briefly until fragrant. Remove from heat and let cool.

Grind the Ingredients

  • Combine the sautéed curry leaves and the spice tempering in a spice grinder or food processor.
  • Grind to a fine powder.

Final Touches

  • Add tamarind and salt to the powder. Pulse a few times to mix well, but avoid over-processing.
  • Store in an airtight container in a cool, dry place.
  • Serve with hot steamed rice and a drizzle of sesame or groundnut oil.
