Ingredients
Jackfruit Preparation
- 500 gm Young Jackfruit fresh or canned, ensure it's in water or brine, green, not syrup. drain well., young green jackfruit is key for this recipe. if using canned
- 2 tbsp Oil for deep frying the jackfruit
Aromatics & Spices
- 2 Large Onions finely chopped
- 2 clove Garlic minced
- 1 inch Ginger minced or finely grated
- 1-2 Chilies finely chopped, adjust to taste, green
- 1 tsp Turmeric Powder
- 1 tbsp Coriander Powder
- 1 tsp Cumin Powder
- 1 tsp Garam Masala
- 0.5 tsp Dry Mango Powder dried mango powder
- 0.5 tsp Chili Powder adjust to taste, red
- 1-2 tsp Salt to taste
Instructions
Prepare the Jackfruit
- Peel and core the jackfruit. Cut it into bite-sized pieces. If using canned jackfruit, ensure it's well-drained.
Boil the Jackfruit
- Boil the jackfruit pieces in salted water until tender, about 10-15 minutes. Drain well and set aside.
Fry the Jackfruit
- Heat 2 tablespoons of oil in a pan or wok over medium-high heat. Fry the boiled jackfruit until golden brown and slightly crispy. Remove and set aside.
Sauté Aromatics
- Heat 2 tablespoons of oil in the same pan. Add the chopped onions and sauté until softened and lightly golden. Add the minced garlic and ginger and sauté for another minute until fragrant.
Blend Spices
- Add the turmeric powder, coriander powder, cumin powder, red chili powder, and garam masala. Sauté for 30 seconds, stirring constantly, until fragrant.
Add Tomatoes and Chilies
- Stir in the chopped green chilies and cook for a minute. Add the chopped tomatoes and cook until softened, about 5 minutes.
Combine and Simmer
- Add the fried jackfruit to the pan, mixing well with the spice mixture. Stir in the yogurt and half a cup of water. Bring to a simmer, cover, and cook for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
Garnish and Serve
- Garnish with fresh coriander leaves and serve hot with roti, naan, or rice.
