  • Peel and dice the jackfruit. In a pot, combine the jackfruit, bay leaf, black cardamom pods, and salt with enough water to cover. Boil for 10 minutes to soften the jackfruit.
  • Drain the jackfruit and discard the bay leaf and cardamom pods. Transfer the cooked jackfruit to a blender and blend until smooth.
  • Heat the olive oil in a pan over medium heat. Sauté the chopped onion and ginger until softened and fragrant, about 2-3 minutes. Add the green chilies and cook for another minute.
  • Add the red chili powder, ground cloves, ground cinnamon, garam masala, and dry mango powder to the pan. Cook for 30 seconds, stirring constantly, until fragrant. This helps to bloom the spices and enhance their flavor.
  • Add the blended jackfruit to the pan and mix well with the spices. Cook for 5-7 minutes, stirring occasionally, until the mixture is heated through and slightly dry.
  • Sprinkle the all-purpose flour over the jackfruit mixture. Cook for 2-3 minutes, stirring constantly, until the flour is cooked and the mixture thickens. This helps to bind the kebabs together.
  • Remove the pan from the heat and let the mixture cool slightly. Once cooled, stir in the lemon juice, ghee, and chopped coriander leaves.
  • Shape the jackfruit mixture into small patties or kebabs. Heat a non-stick pan over medium heat. Shallow fry the kebabs for 3-4 minutes per side, until golden brown and crispy.
