Ingredients
For the Pineapple Pound Cake
- 1 cup Cake Flour
- ½ cup Butter softened
- ¾ cup Sugar
- 3 Large Eggs
- 3 tbsp Milk
- 1 tsp Vanilla Extract
- 1 tsp Baking Powder
- ½ cup Del Monte Pineapple chopped
For the Cake Poppers
- 1 ½ cup Pineapple Pound Cake crumbled
- ¼ cup Del Monte Pineapple finely chopped
- ¼ cup Del Monte Peach Halves finely chopped
- ¼ cup Del Monte Prunes chopped
For the Chocolate Coating
- 130 gm Chocolate dark, or milk chocolate

- Preheat oven to 325°F (165°C). Grease and flour a loaf pan. This will prevent the cake from sticking.
- In a large bowl, cream together the softened butter and sugar until light and fluffy. This incorporates air for a tender crumb.
- In a separate bowl, whisk together the eggs, milk, and vanilla extract.
- In another bowl, sift together the cake flour and baking powder. Sifting aerates the dry ingredients for a lighter cake.
