Ingredients
Bread
- 8 slices Bread
Filling
- 1/4 cup Carrot finely chopped
- 1/4 cup Bell Peppers capsicum, finely chopped
- 1/4 cup Onion finely chopped
- 1 Tomato finely chopped
- 1/2 cup Corn boiled
Sauce and Seasoning
- 2 Tbsp Tomato Sauce
- 1/2 tsp Oregano Flakes
- 1/2 tsp Chili Flakes
- 1/2 tsp Salt or to taste
Cheese and Flour
- 1/2 cup Mozzarella Cheese shredded
- 2 Tbsp All-Purpose Flour
For Frying
- Oil for frying
Instructions
- In a pan, heat 2 tablespoons of oil. Add the chopped onion and sauté for about 2 minutes, until softened.
- Add the chopped carrot, bell pepper, corn, and tomato to the pan. Sauté for another 2 minutes, until slightly softened but still crisp-tender.
- Stir in the tomato sauce, oregano, chili flakes, and salt. Mix well to combine. Remove from heat and let the filling cool completely.
- Once the filling is cooled, gently mix in the shredded mozzarella cheese. It's important to add the cheese after the filling has cooled to prevent it from melting prematurely.
- In a small bowl, whisk together the all-purpose flour with a little water at a time until a smooth, slightly thick paste forms. This paste will act as glue to seal the bread pockets.
- Cut the crusts off the bread slices and use a rolling pin to flatten them slightly. This helps create a more even pocket and prevents air bubbles.
- Place a generous spoonful of the filling onto the center of each flattened bread slice.
- Brush the flour paste along the edges of the bread. Fold the bread over the filling to form a pocket, pressing the edges firmly to seal.
- Heat oil in a large pan over medium heat. Carefully place the filled bread pockets into the hot oil and fry until golden brown and crispy on both sides.
- Remove the fried pockets from the pan and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce, such as tomato sauce or green chutney.
Recipe Notes
Good To Know
- For an extra crispy outer layer, lightly brush each bread pocket with melted butter or garlic-infused oil before toasting or baking.
- If you prefer a tangier flavor profile, add a few chopped pickled jalapeños or a sprinkle of chaat masala into the vegetable filling.
- To prevent the bread from getting soggy, spread a thin layer of cheese or tomato/pizza sauce first, then add the vegetable filling—this creates a moisture barrier and keeps the pockets crisp.
Expert Tips
- Customize your filling with your favorite cheeses. A blend of mozzarella, cheddar, and provolone works well, or try feta for a tangier twist.
- For a heartier meal, add cooked protein like shredded chicken, ground beef, or crumbled sausage to the vegetable filling.
- Get creative with your seasonings! Italian herbs, taco seasoning, or even a sprinkle of curry powder can add exciting new dimensions of flavor.
Storage Instructions
- These pockets can be made ahead and frozen. Simply assemble, wrap tightly, and freeze.
- Toast or bake directly from the freezer when ready to serve, adding 2-3 extra minutes to the cooking time.
