Ingredients
For the Idli Batter
- 1 cup Semolina rava or sooji, roasted
- 1 cup Yogurt curd or dahi
- 1/2 tsp Salt or to taste
- Water as needed
- 1/2 tsp Eno Fruit Salt
For the Potato Filling
- 3 Potatoes boiled and mashed
- 1 tsp Chili finely chopped, green
- 1 tsp Ginger grated
- 1/2 tsp Turmeric Powder haldi
- 1/2 tsp Mango Powder amchur, dry
- 1/2 tsp Mustard Seeds rai
- 1/2 tsp Cumin Seeds jeera
- 1/4 tsp Asafoetida hing
- 1/2 tsp Salt or to taste
- 4 tsp Oil
- Coriander dhania, as needed, freshly chopped
Instructions
- In a mixing bowl, combine the roasted semolina, yogurt, and ½ teaspoon of salt. Mix well and let it soak for 30 minutes. This allows the semolina to absorb the moisture and soften, resulting in lighter idli.
- Heat the oil in a pan over medium heat. Add the mustard seeds and let them splutter. This adds a nutty flavor and aroma to the filling. Add the cumin seeds and asafoetida, sautéing briefly until fragrant. Add the grated ginger and chopped green chilies, sautéing for a minute until softened.
- Add the mashed potatoes, turmeric powder, dry mango powder, and ½ teaspoon of salt to the pan. Mix well, ensuring the spices are evenly distributed. Cook for 2-3 minutes, stirring occasionally, until the potatoes are heated through and well combined with the spices.
- Stir in the freshly chopped coriander leaves. Remove the pan from the heat and set the potato filling aside.
- After the semolina has soaked for 30 minutes, add water as needed to achieve an idli batter consistency. It should be thick but pourable. Add the Eno Fruit Salt and gently mix. The Eno Fruit Salt acts as a leavening agent, creating air bubbles that make the idli light and fluffy. Avoid overmixing, as this can deflate the batter.
- Grease the idli plates with oil. This prevents the idli from sticking. Fill a steamer with enough water and bring it to a boil.
- Pour 1 teaspoon of idli batter into each impression of the greased idli plates. Place a small portion of the potato filling in the center of each batter-filled impression, gently pressing it down. Cover the filling with another teaspoon of idli batter, ensuring the filling is completely enclosed.
- Place the filled idli plates in the steamer, stacking them if necessary. Steam for 12 minutes over medium-high heat. Steaming cooks the idli evenly and gives them a soft, spongy texture.
- Once steamed, remove the idli plates from the steamer and let them rest for 3 minutes to cool slightly. This makes it easier to unmold the idli without breaking them.
- Carefully unmold the idli from the plates. Serve hot with your favorite chutney.

- You can add vegetables of your choice to the potato stuffing (carrots, beans, green peas, etc.).
- Batter consistency should not be too thick nor too runny.
- Instead of Eno Fruit Salt, you can use baking soda.
- For an extra crunchy texture, add a layer of roasted cashews or lightly toasted chana dal at the bottom of each idli mold before pouring in the batter and stuffing.
