Ingredients
For the Bada
- 1 cup Semolina (suji)
- 2 cup Yogurt (curd)
- 1 1/2 tsp Salt or to taste
- 1/4 tsp Asafoetida (hing)
- 1/2 tsp Ginger ground
- 1/2 tsp Baking Soda
- Oil for deep frying
- Water for soaking

- 1/4 cup Chutney sweet
- Yogurt for serving
- Salt black
- Kashmiri Chili Powder
Instructions
- In a mixing bowl, combine the semolina, yogurt, salt, asafoetida, and ginger powder.
- Mix well and cover the bowl. Let it rest for 30 minutes to allow the semolina to absorb the moisture and soften.
- After 30 minutes, add the baking soda to the batter. Gently mix it in using your hand. Wetting your hand beforehand will prevent the batter from sticking.
- Heat the oil in a deep fryer or a large pot over medium-high heat. Once the oil is hot, carefully drop small portions of the batter into the hot oil, forming small fritters or badas.
- Deep-fry the badas until they turn golden brown and crispy, turning them occasionally for even cooking.
- While the badas are frying, prepare a bowl of salted water. Once the badas are fried, transfer them directly to the salted water. Soaking the badas in salted water helps remove excess oil and makes them soft and spongy.
- After 5 minutes, gently squeeze out the excess water from the badas. Be careful not to break them.
