Recipe Notes

Don’t keep the serving recipe for long time. Serve immediately otherwise taste will spoil.

Additional Tips

  • For extra soft badas, soak them in warm water immediately after frying, then gently squeeze out excess water before immersing them in yogurt—this ensures the badas absorb the curd beautifully.
  • If you prefer a lighter version, bake the badas in a paniyaram pan or air fryer instead of deep-frying them, reducing oil without compromising on taste or texture.
  • Enhance the flavor and color by adding finely chopped fresh coriander and a sprinkle of pomegranate seeds on top just before serving for a festive, street-style presentation.
  • Prepare the sweet chutney and yogurt mixture a day ahead; this allows the flavors to meld and makes assembly quicker when you’re ready to serve, especially for gatherings or parties.
