Instructions

Prepare the Syrup

  • Heat water and sugar in a heavy-bottomed saucepan. Bring to a boil, then reduce heat and simmer for 5-7 minutes, until slightly thickened but not too syrupy.

Prepare the Kunafa Filling

  • In a bowl, combine ricotta cheese, sweetened condensed milk, cardamom, and cinnamon (if using). Mix until well combined.

Prepare the Kunafa Base

  • Heat ghee in a large skillet over medium heat. Add vermicelli and toast until golden brown, stirring frequently. Add milk and sugar; cook until the milk is absorbed and the vermicelli is tender but not mushy. Set aside to cool slightly.

Assemble and Bake the Kunafa

  • Lightly grease a baking dish. Press half of the vermicelli mixture into the bottom of the dish. Spread the ricotta cheese filling evenly over the vermicelli. Sprinkle with chopped almonds. Top with the remaining vermicelli mixture, pressing gently to compact.

Bake

  • Bake in a preheated oven at 350°F (180°C) for 15-20 minutes, or until golden brown and heated through. Let cool completely before serving.

Serve

  • Once cool, carefully transfer the kunafa to a serving plate. Drizzle generously with the prepared syrup. Garnish with additional almonds and serve immediately.

Recipe Notes

Expert Tips for the Perfect Kunafa

  • Use high-quality ingredients for the best flavor. The ricotta cheese should be fresh and creamy.
  • Don't overcook the vermicelli. It should be golden brown and tender, but not burnt.
  • Allow the kunafa to cool completely before adding the syrup. This prevents the bottom from becoming soggy.
  • Get creative with your garnish! Try adding other dried fruits, nuts, or even a sprinkle of rose petals for an extra touch of elegance.
