  • In a large pot, bring the milk to a rolling boil over high heat. This initial high heat helps to scald the milk, preventing it from scorching later.
  • Reduce the heat to low and simmer the milk gently for 30-40 minutes, stirring occasionally, until it slightly thickens.
  • Add the khoya (mawa), sugar, and cardamom powder to the simmering milk. Stir well to combine and ensure the khoya melts completely and the sugar dissolves.
  • Remove the milk mixture from the heat and set aside.
  • Heat the coal briquette until it is red hot. Using tongs, carefully place the hot coal in a small heatproof bowl.

  • Sprinkle the agarwood (oud) onto the hot coal. It will start to smoke immediately, releasing its fragrant aroma.
  • Quickly cover the bowl with a larger pot or a clay pot to trap the smoke. Let it infuse for 3-4 minutes. This allows the smoky flavor to concentrate.

  • Carefully remove the smaller bowl with the coal (use tongs and be cautious of the heat). Immediately pour the warm milk mixture into the larger pot, which now holds the smoky essence.
  • Cover the pot tightly with a lid to seal in the smoky aroma. Allow the sharbat to infuse for at least 15-20 minutes.
  • Pour the Doodh Ka Sharbat into serving glasses. Garnish generously with slivered almonds and pistachios.
  • Serve chilled for a refreshing treat. This sharbat is best enjoyed fresh.
