Instructions

Prepare the Aromatics

  • Grate the garlic cloves and finely chop the green chilies. You can use a mortar and pestle or a food processor to create a coarse paste.

Sauté the Aromatics

  • Heat the oil in a wok or pot over medium heat. Add the grated garlic and sauté until lightly pink, about 1-2 minutes. Be careful not to burn the garlic.

Add Chilies and Spices

  • Add the green chili paste (or finely chopped chilies) and sauté for 30 seconds. Stir in the turmeric powder (if using) and cook for another 15 seconds until fragrant.

Cook the Lentils

  • Add the soaked red lentils to the pot and sauté for 2-3 minutes, stirring constantly. Do not add water at this stage.

Incorporate Dill and Simmer

  • Add the chopped dill, mix well, and cover the pot. Cook for 5 minutes, allowing the lentils to soften and absorb the flavors.

Finish and Serve

  • Add salt and water (if needed to adjust consistency), stir gently, and cover the pot again. Cook until the lentils are tender and the dal has reached your desired consistency, about 10-15 minutes more. Taste and adjust seasoning as needed. Serve hot with warm rotis, chapatis, or parathas.

Recipe Notes

Expert Tips for the Best Khadi Suwa Dal

  • Soaking is Key: Soaking the red lentils for at least 30 minutes before cooking helps them cook faster and more evenly, resulting in a smoother, creamier dal.
  • Don't Overcrowd the Pan: Make sure to use a pot that is large enough for the lentils to cook without sticking to the bottom. This prevents burning and ensures even cooking.
  • Adjust Spice Levels: Feel free to adjust the number of green chilies according to your preference. For a milder flavor, use fewer chilies, or remove the seeds for less heat.
  • Garnish and Serve: For an extra touch, garnish your Khadi Suwa Dal with a squeeze of lemon juice and a sprinkle of chopped cilantro before serving. This adds a refreshing brightness to the dish.
