- 1/4 cup Basmati Rice rinse thoroughly before soaking.
- 1/4 cup Water for soaking the rice.
- 4 tbsp Honey adjust to your preferred sweetness.
- 2 tbsp Gulkand rose petal preserve.
- 1/2 tsp Cardamom Powder finely ground.
- 1.5 tsp Rose Water
For Garnishing
- 1 tbsp Rose Petals for decoration.
- 1 tsp Gulkand optional, for extra garnish.
Instructions
Prepare the Rice
- Soak 1/4 cup basmati rice in 1/4 cup water for at least 30 minutes. Drain well.
Grind the Rice
- Grind the soaked rice in a blender until it forms a coarse paste. Add a few tablespoons of milk to help with blending, if needed.
Cook the Phirni
- In a heavy-bottomed saucepan, bring 1/2 liter of whole milk to a simmer over medium heat. Stir occasionally to prevent sticking.
Add Rice Paste
- Slowly add the ground rice paste to the simmering milk, stirring continuously to avoid lumps. Reduce heat to low.
Thicken the Phirni
- Continue stirring until the mixture thickens to a creamy consistency, about 15-20 minutes. This requires constant attention.
Add Flavorings
- Stir in the honey, gulkand, cardamom powder, and rose water. Mix well and cook for another 2-3 minutes, stirring constantly.
