Ingredients
For the Biscuits
- 1 cup Whole Wheat Flour approximately 130g, whole
- 1/2 tsp Salt
- 1/4 cup Cocoa Powder unsweetened
- 1/4 cup Sugar brown, light, packed
- 1/2 cup Butter cold, cubed, unsalted
- 2 tsp Vegetable Oil
- 1 tsp Vanilla Extract
- 1 tbsp Honey
- 1-2 tbsp Milk as needed to bring dough together
- 2 tbsp Sugar for sprinkling, granulated
For the Filling
- 1/4 cup Butter softened, unsalted
- 2 tbsp Sugar also known as confectioners' sugar, powdered
- 1/2 tbsp Cocoa Powder unsweetened
- 1-2 tbsp Milk as needed to reach desired consistency
Instructions
Making the Biscuits
- Combine whole wheat flour, salt, cocoa powder, and brown sugar in a large bowl. Cut in cold butter and oil using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Add honey and vanilla extract. Stir until just combined.
- Gradually add milk, 1 tablespoon at a time, until the dough comes together. Do not overmix.
- Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 15 minutes.
- On a lightly floured surface, roll out the dough to 1/4 inch thickness. Use a knife or pizza cutter to cut into 6x3 inch rectangles (or your desired size).
- Place the cut biscuits onto a baking sheet lined with parchment paper. Sprinkle with granulated sugar and prick with a fork.
- Refrigerate for another 15 minutes before baking.
- Preheat oven to 350°F (180°C). Bake for 16-18 minutes, or until the edges are lightly golden brown.
- Remove from oven and let cool completely on a wire rack.
Making the Filling
- In a separate bowl, cream together softened butter and powdered sugar until light and fluffy.
- Whisk in cocoa powder. Gradually add milk until you reach a smooth, spreadable consistency.
Assembling the Biscuits
- Once the biscuits are completely cool, spread a layer of filling onto one biscuit, top with another biscuit to create a sandwich.
- Store in an airtight container at room temperature. Serve and enjoy!
Recipe Notes
Expert Tips for Perfect Bourbon Biscuits
- For extra rich flavor, use dark brown sugar instead of light brown.
- Don't overmix the dough; this can result in tough biscuits.
- Chilling the dough is crucial for preventing the biscuits from spreading too much during baking.
- If your filling is too thick, add a little more milk; if it's too thin, add a bit more powdered sugar.
