- 2 tbsp Fennel Seeds

- 20-25 Rose Petals dried
- 8-10 Peppercorns black
Instructions
- In a dry pan over low heat, gently roast the almonds, pistachios, and cashews. This enhances their nutty flavor and aroma. Roast for 3-4 minutes, stirring frequently to prevent burning.
- Add the saffron strands to the same pan and toast briefly until their color deepens. This intensifies the saffron's flavor and color contribution to the masala.
- Once the nuts and saffron have cooled, transfer them to a dry grinder or spice mill. Add the melon seeds, poppy seeds, fennel seeds, green cardamom pods, dried rose petals, and black peppercorns.
- Grind the mixture to a coarse or fine powder, depending on your preference. A coarser grind offers a more textured Thandai, while a finer grind creates a smoother blend.
- Transfer the Thandai Masala to an airtight container. Store it in the refrigerator for up to 1-2 months to maintain its freshness and potency.
