  • 1/2 tsp Asafoetida also known as hing
  • 1/2 tsp Cumin Seeds roasted
  • 1 tsp Rock Salt
  • 1 tsp Salt also known as kala namak, black
  • 1/2 tsp Pepper freshly ground, black, optional: add white pepper for milder heat
  • 2 tsp Mango Powder also known as amchur, dry
  • 1/2 tsp Salt adjust to taste
  • 1 tsp Pomegranate Seeds optional, dried, lightly roast to remove excess moisture

Instructions
 

Roasting the Spices

  • Lightly roast the asafoetida (hing) in a dry pan over medium heat until fragrant. Separately, roast the dried pomegranate seeds (anardana), if using, on low heat until any moisture is completely evaporated.

Grinding the Spices

  • Allow the roasted spices to cool completely. Grind all ingredients to a fine powder using a spice grinder or a mortar and pestle. For a smoother texture, pulse the ingredients in short bursts, checking the consistency frequently.

Storing the Chaat Masala
