Ingredients
For the Nut Topping
- 1/2 cup Cashews roughly chopped
- 2 tbsp Pistachios shelled and roughly chopped
For the Pudding
- 1 liter Milk whole milk recommended
- 2/3 cup Ricotta Cheese or paneer, well drained
- 1/2 can (14 oz) Sweetened Milk condensed
- 1.5 tbsp Sugar adjust to taste
- 1 pinch Saffron
- 1/2 tsp Clarified Butter clarified butter
For the Fruit Topping
- 2 cup Assorted Fruits berries, fresh or frozen, such as mango and kiwi. chopped.
Instructions
Prepare the Nut Topping
- Heat 1/2 tsp ghee in a small pan over medium heat. Add the chopped cashews and pistachios. Fry until lightly golden, stirring frequently to prevent burning. Remove from heat and set aside.
Cook the Pudding
- In a heavy-bottomed saucepan or wok, heat the remaining 1/2 tsp ghee. Add the milk and bring to a boil. Reduce heat and simmer until the milk reduces by half, stirring occasionally to prevent sticking.
- Add the sweetened condensed milk, sugar, and saffron strands. Simmer for 10 minutes, stirring occasionally.
- Reduce heat to low. Gently stir in the ricotta cheese (or paneer) until completely incorporated and the mixture thickens to a creamy consistency. Stir in the fried nuts. Remove from heat.
Assemble and Chill
- Pour the pudding into a serving bowl. Gently arrange the chopped fruit on top. Refrigerate for at least 3-4 hours, or preferably overnight, to allow the flavors to meld and the pudding to chill completely.
