Ingredients
Fruits
- 4 cup Pineapple and finely chopped, cored, fresh, peeled
Sweetener & Acid
- 2 1/2 cup Sugar granulated sugar; amount can be adjusted to taste
- 2 tbsp Lime Juice freshly squeezed
Liquid
- 1 cup Water
Optional
- 1/2 tsp Pectin for setting, powdered; optional
Instructions
Prepare the Pineapple
- Peel, core, and finely chop 4 cups of fresh pineapple.
Cook the Pineapple
- In a large, heavy-bottomed saucepan, combine the chopped pineapple and 1 cup of water. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer for 20-30 minutes, or until the pineapple is very soft.
Add Sugar and Lime Juice
- Stir in 2 1/2 cups of granulated sugar and 2 tablespoons of fresh lime juice (or to taste). If using pectin, add it now, stirring constantly.
Simmer and Thicken
- Continue to cook over medium-low heat, stirring frequently, for 30-45 minutes, or until the jam reaches a thick, jelly-like consistency. A wrinkle test will confirm its readiness; place a small spoonful on a cold plate and let it cool for a minute. If it wrinkles, it's done.
Cool and Store
- Remove from heat and let the jam cool completely. Pour into sterilized jars and seal tightly. Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.
Recipe Notes
Expert Tips for Perfect Pineapple Jam
- Use ripe pineapple: Ripe pineapple will result in a sweeter and more flavorful jam.
- Adjust sweetness to taste: Start with 2 1/2 cups of sugar and adjust based on your preference and the sweetness of your pineapple.
- Sterilize your jars: This will help prevent spoilage and ensure a longer shelf life.
- Consider adding pectin: Pectin helps to thicken the jam and improves its setting. Powdered pectin is easy to find in supermarkets.
