Ingredients
 

Fruits

  • 4 cup Pineapple and finely chopped, cored, fresh, peeled

Sweetener & Acid

  • 2 1/2 cup Sugar granulated sugar; amount can be adjusted to taste
  • 2 tbsp Lime Juice freshly squeezed

  • 1/2 tsp Pectin for setting, powdered; optional

Instructions
 

Prepare the Pineapple

  • Peel, core, and finely chop 4 cups of fresh pineapple.

Cook the Pineapple

  • In a large, heavy-bottomed saucepan, combine the chopped pineapple and 1 cup of water. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer for 20-30 minutes, or until the pineapple is very soft.

Add Sugar and Lime Juice

  • Stir in 2 1/2 cups of granulated sugar and 2 tablespoons of fresh lime juice (or to taste). If using pectin, add it now, stirring constantly.

Simmer and Thicken

  • Continue to cook over medium-low heat, stirring frequently, for 30-45 minutes, or until the jam reaches a thick, jelly-like consistency. A wrinkle test will confirm its readiness; place a small spoonful on a cold plate and let it cool for a minute. If it wrinkles, it's done.

Cool and Store

  • Remove from heat and let the jam cool completely. Pour into sterilized jars and seal tightly. Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.
