Instructions

Activate the Yeast

  • Combine warm water and sugar in a small bowl. Sprinkle yeast over the water and let stand for 5 minutes until foamy.

Combine Dry Ingredients

  • In a large bowl, whisk together flour and salt.

Make the Dough

  • Add the activated yeast mixture to the flour mixture. Stir until a shaggy dough forms.

Knead the Dough

  • Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic.

First Rise

  • Lightly oil a large bowl. Place the dough in the bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.

Second Rise

  • Lightly oil a baking sheet or skillet (approximately 9x13 inches). Gently punch down the dough and transfer it to the prepared pan. Spread the dough evenly into the pan. Cover and let rise for another 30 minutes.

Top and Score

  • Preheat oven to 400°F (200°C). Drizzle the dough with olive oil and sprinkle with minced garlic and fennel seeds. Use a sharp knife to make diagonal slits across the top of the focaccia.

Bake

  • Bake for 30-35 minutes, or until golden brown and the internal temperature reaches 200-210°F (93-99°C).

Cool and Serve

  • Let cool slightly in the pan before slicing and serving. Enjoy!

Recipe Notes

Expert Tips for the Perfect Focaccia:

  • Use high-quality olive oil for the best flavor. A robust extra virgin olive oil will elevate the taste.
  • Don't overwork the dough during kneading. Overkneading can result in a tough focaccia.
  • For a more flavorful focaccia, add other herbs such as rosemary or thyme to the topping along with the garlic and fennel seeds.
  • Experiment with different toppings! Sun-dried tomatoes, olives, roasted vegetables—the possibilities are endless.
