Ingredients
For the Dough
- 1 cup Milk warmed to about 110°f (43°c)
- 1 tbsp Sugar brown
- 1 tsp Active Yeast dry
- 3 tbsp Olive Oil divided
- 2 1/2 cup All-Purpose Flour if needed, plus more for dusting
- 1 tsp Salt
- 1 tsp Rosemary finely chopped, fresh
- 2 tsp Thyme finely chopped, fresh
- 1 Lime zest
For the Herbal Oil
- 1/4 cup Olive Oil
- 1/2 tsp Rosemary finely chopped, fresh
- 1 tsp Thyme finely chopped, fresh
- 1/2 Lime zest
- Flaky Sea Salt to taste, for sprinkling
Instructions
Prepare the Herbs and Lime
- Finely chop the fresh rosemary and thyme. Zest the lime.
Activate the Yeast
- In a large glass measuring cup, whisk together the warm milk and brown sugar. Add the yeast and let stand for 5-10 minutes, or until foamy.
Make the Dough
- In a large bowl of a stand mixer (or a large bowl for hand mixing), combine the flour, salt, chopped rosemary, thyme, and half of the lime zest. Add the activated yeast mixture and 1 tablespoon of olive oil. Mix with the dough hook (or your hands) until a shaggy dough forms. Knead for 5-7 minutes in the mixer (or 10 minutes by hand) until the dough is smooth and elastic.
First Rise
- Lightly oil a large bowl. Place the dough in the bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
Prepare the Herbal Oil
- In a small bowl, combine the remaining olive oil, remaining chopped herbs, and remaining lime zest. Microwave for 30 seconds to infuse the flavors. Set aside to cool.
Shape and Second Rise
- Lightly oil a baking sheet (approximately 9x13 inches). Gently transfer the dough to the prepared pan and stretch it to fill the pan. Using your fingers, create dimples in the surface of the dough. Cover and let rise for another 30 minutes.
Bake the Focaccia
- Preheat oven to 425°F (220°C). Drizzle the herbal oil evenly over the dough and sprinkle generously with flaky sea salt. Bake for 20-25 minutes, or until golden brown.
Cool and Serve
- Let the focaccia cool slightly before slicing and serving. Enjoy!
