Make the Black Tapioca Pearls

  • In a saucepan, bring 4 cups of water to a rolling boil. Add the large white tapioca pearls. This method creates black tapioca pearls by infusing them with tea.
  • Once boiling, add the black tea leaves and sugar. Stir well. Continue to boil until the tapioca pearls float to the surface, indicating they are cooked through. This may take some time, so be patient.
  • Meanwhile, brew a cup of strong black tea. Use good quality loose leaf tea or a tea bag for the best flavor. Let it steep, then strain and set aside to cool.
