Ingredients
Dry Ingredients
- 1 cup Whole Wheat Flour whole
- 1.5 tsp Salt or to taste
- 1 tsp Onion Seeds kalaunji
- 1.5 tbsp Coriander fresh, chopped; also known as dhania
Instructions
Prepare the Dough
- Make a soft dough using whole wheat flour, salt, and water. Knead for 5-7 minutes until smooth and elastic. Let the dough rest for 10-20 minutes, covered with a damp cloth.
Shape and Fill the Kulcha
- Divide the dough into equal-sized balls (approximately 6-8 depending on desired size). Roll each ball into a 4-5 inch circle.
- Sprinkle onion seeds and chopped coriander leaves evenly over each circle.
Cook the Kulcha
- Heat a flat griddle or tawa over medium heat. Sprinkle a few drops of water on the hot tawa to prevent sticking.
- Place a kulcha on the tawa and cook for 2-3 minutes per side, or until lightly browned and cooked through. Press gently with a spatula to ensure even cooking.
Finish and Serve
- Once cooked, brush each kulcha with ghee or butter. Serve hot with your favorite Indian curry or vegetable dish.
Recipe Notes
Expert Tips for Perfect Kulcha
- For extra flavor, add a pinch of ajwain (carom seeds) to the dough.
- If the dough feels too dry, add a teaspoon of oil or yogurt for extra moisture.
- Don't overcrowd the tawa; cook the kulchas in batches to ensure even browning.
- Experiment with different fillings! Try adding finely chopped green chilies or grated ginger for an extra kick.
