Ingredients
Chicken & Marinade
- 2 lb Chicken Drumsticks
- 1 cup Yogurt hung curd, thickened yogurt, strained for a creamier texture
- 2 tbsp Kashmiri Chili Powder for vibrant color and mild heat, red
- 1 tsp Turmeric Powder haldi
- 2 tbsp Coriander Powder dhania
- 1 tbsp Cumin Powder jeera
- 1 tbsp Garam Masala
- 1 tbsp Tandoori Masala
- 1 tsp Pepper black
- 1.5 tsp Salt or to taste
- 2 tbsp Ginger-Garlic Paste
- 2 tbsp Lemon Juice
Other
- 2 tbsp Vegetable Oil
- 1 tbsp Chaat Masala optional, for garnish
Instructions
First Marinade
- Marinate the chicken drumsticks with 1 tsp salt, 1 tbsp chili powder, 1 tbsp lemon juice, and 1 tbsp ginger-garlic paste. Refrigerate for at least 1 hour.
Second Marinade
- In a bowl, combine the yogurt, remaining salt, all the spices (Kashmiri chili powder, turmeric, coriander, cumin, garam masala, tandoori masala, and pepper), remaining ginger-garlic paste, and remaining lemon juice. Mix well. Add the marinated chicken and coat thoroughly in the spice mixture. Marinate in the refrigerator for at least 2 hours, or preferably overnight for maximum flavor.
Preheat & Prepare
- Preheat your oven to 400°F (200°C). Line a baking tray with aluminum foil. Place a wire rack on top of the baking tray for even cooking and to allow air circulation.
Bake the Chicken
- Arrange the marinated chicken drumsticks on the wire rack, ensuring they are not overcrowded. Drizzle 1 tbsp of vegetable oil over the chicken.
- Bake for 30 minutes. Remove from the oven, carefully turn the drumsticks, and drizzle with the remaining oil.
- Bake for another 30 minutes, or until the chicken is cooked through and has a nice char. You can loosely cover the ends of the drumsticks with foil to prevent them from over-browning if needed.
Garnish & Serve
- Garnish with chaat masala (optional). Serve hot with your favorite sides such as naan, salad, and lemon wedges.
