Instructions

First Marinade

  • Marinate the chicken drumsticks with 1 tsp salt, 1 tbsp chili powder, 1 tbsp lemon juice, and 1 tbsp ginger-garlic paste. Refrigerate for at least 1 hour.

Second Marinade

  • In a bowl, combine the yogurt, remaining salt, all the spices (Kashmiri chili powder, turmeric, coriander, cumin, garam masala, tandoori masala, and pepper), remaining ginger-garlic paste, and remaining lemon juice. Mix well. Add the marinated chicken and coat thoroughly in the spice mixture. Marinate in the refrigerator for at least 2 hours, or preferably overnight for maximum flavor.

Preheat & Prepare

  • Preheat your oven to 400°F (200°C). Line a baking tray with aluminum foil. Place a wire rack on top of the baking tray for even cooking and to allow air circulation.

Bake the Chicken

  • Arrange the marinated chicken drumsticks on the wire rack, ensuring they are not overcrowded. Drizzle 1 tbsp of vegetable oil over the chicken.
  • Bake for 30 minutes. Remove from the oven, carefully turn the drumsticks, and drizzle with the remaining oil.
  • Bake for another 30 minutes, or until the chicken is cooked through and has a nice char. You can loosely cover the ends of the drumsticks with foil to prevent them from over-browning if needed.

Garnish & Serve

  • Garnish with chaat masala (optional). Serve hot with your favorite sides such as naan, salad, and lemon wedges.

Recipe Notes

Expert Tips for Perfect Tandoori Chicken:

  • Use high-quality spices: Freshly ground spices will significantly enhance the flavor of your Tandoori chicken.
  • Don't overcrowd the baking tray: Ensure proper air circulation for even cooking and that desirable char.
  • Marinate longer for deeper flavor: Marinating overnight will allow the chicken to absorb the spices more fully, resulting in more intense flavor.
  • Adjust spice levels to taste: Feel free to adjust the amount of chili powder based on your preferred level of spiciness.
