Prepare the Batter

  • Combine gram flour, semolina, red chili powder, coriander powder, asafoetida, salt, and 1 tablespoon of oil in a large mixing bowl.
  • Gradually add yogurt, mixing until a semi-thick batter forms. The consistency should be slightly thicker than pancake batter.
  • Stir in the chopped green chilies, fresh coriander, and curry leaves.
  • Let the batter rest for about 10-15 minutes to allow the flavors to meld.

Fry the Vadas

  • Heat oil in a deep frying pan or kadai over medium-high heat.
  • Once the oil is hot enough (a small piece of batter should sizzle immediately), carefully drop spoonfuls of the batter into the hot oil, ensuring not to overcrowd the pan.
  • Fry the vadas until they are golden brown and crispy on both sides, turning occasionally. This should take about 2-3 minutes per side.
  • Remove the vadas from the oil and place them on a paper towel-lined plate to drain excess oil.

Serve

  • Serve the Instant Vadas hot with your favorite chutney (coconut chutney is highly recommended) or sambar.
