Ingredients
Dry Ingredients
- 2 cup Gram Flour besan
- 1 cup Semolina rava, suji
- 1 tsp Chili Powder red
- 1 tbsp Coriander Powder roasted dhania powder
- 1/2 tsp Asafoetida hing
- 1 tsp Salt to taste
Garnish/Flavor Boosters
- 1 tbsp Chilies finely chopped, green
- 2 tbsp Coriander finely chopped dhania
- 2 tbsp Curry Leaves finely chopped
Instructions
Prepare the Batter
- Combine gram flour, semolina, red chili powder, coriander powder, asafoetida, salt, and 1 tablespoon of oil in a large mixing bowl.
- Gradually add yogurt, mixing until a semi-thick batter forms. The consistency should be slightly thicker than pancake batter.
- Stir in the chopped green chilies, fresh coriander, and curry leaves.
- Let the batter rest for about 10-15 minutes to allow the flavors to meld.
Fry the Vadas
- Heat oil in a deep frying pan or kadai over medium-high heat.
- Once the oil is hot enough (a small piece of batter should sizzle immediately), carefully drop spoonfuls of the batter into the hot oil, ensuring not to overcrowd the pan.
- Fry the vadas until they are golden brown and crispy on both sides, turning occasionally. This should take about 2-3 minutes per side.
- Remove the vadas from the oil and place them on a paper towel-lined plate to drain excess oil.
Serve
- Serve the Instant Vadas hot with your favorite chutney (coconut chutney is highly recommended) or sambar.
Recipe Notes
Expert Tips for Perfect Instant Vadas
- For extra crispy vadas, add a teaspoon of rice flour to the batter.
- Don't overcrowd the pan while frying; this will lower the oil temperature and result in oily vadas.
- Adjust the amount of chili powder according to your spice preference.
- If the batter seems too thick, add a tablespoon or two of water to adjust the consistency.
