For the Nutri-Waffles:

  • 2 cup Greek Yogurt or hung curd
  • 1 tbsp Sugar or honey, to taste
  • 1/2 cup Strawberries chopped
  • 1/2 cup Grapes green, halved or quartered
  • 1/2 cup Grapes black, halved or quartered
  • 1 medium Banana chopped
  • 1/2 tsp Cumin ground, jeera
  • 1/4 tsp Pepper black, ground
  • 1/4 cup Coriander cilantro, finely chopped
  • 1/4 cup Mint finely chopped
  • 1/2 tsp Salt or to taste

Instructions
 

Prepare the Waffle Batter

  • Puree the sprouted moong dal in a blender until smooth.
  • In a large bowl, combine the pureed moong dal, spinach, oats, ginger-garlic paste, green chili paste, onion, coriander, mint, garam masala, black pepper, salt, ragi flour, soybean flour, chickpea flour, and whole wheat flour.
  • Whisk in eggs (or flax eggs) until well combined.

Cook the Waffles

  • Lightly grease a waffle iron with oil.
  • Pour 1/4 cup of batter onto the hot waffle iron.
  • Cook according to the manufacturer's instructions until golden brown and crispy.
  • Repeat with the remaining batter.

Prepare the Fruity Yogurt

  • In a bowl, gently mix the Greek yogurt (or hung curd), sugar (or honey), strawberries, green grapes, black grapes, banana, cumin powder, black pepper, coriander, mint, and salt.

Serve

  • Serve the warm waffles immediately with a dollop of fruity yogurt.

  • If you don't have a waffle iron, you can cook the batter in a lightly oiled non-stick skillet as small pancakes.
