Ingredients
 

For the Dhokla Batter

  • 1 cup Semolina rava
  • 1/2 cup Rolled Oats use quick-cooking oats, finely ground.
  • 1/2 cup Yogurt curd
  • 1 cup Spinach fresh spinach, blanched and pureed.
  • 2 tbsp Lemon Juice freshly squeezed is best.
  • 1.5 tsp Salt adjust to taste.
  • 1 tbsp Sugar
  • 1 tsp Baking Soda this can be substituted for eno fruit salt.
  • 1 tbsp Oil for the batter and tempering.
  • 1 cup Water

Prepare the Spinach

  • Blanch the spinach leaves in boiling water for 1-2 minutes. Drain and immediately plunge into ice water to stop the cooking process. Squeeze out excess water and blend into a smooth puree.

Prepare the Oat Powder

  • Dry roast the rolled oats in a pan over medium heat until lightly browned and fragrant. Let them cool completely, then grind them into a fine powder using a blender or spice grinder.

Combine the Batter Ingredients

  • In a large bowl, whisk together the semolina, oat powder, spinach puree, yogurt, lemon juice, salt, sugar, and 1 tablespoon of oil. Gradually add 1 cup of water while whisking constantly until a smooth, lump-free batter forms. Let the batter rest for at least 15 minutes.

Steam the Dhokla

  • Grease a baking dish or steamer plate with oil. Add the baking soda to the batter and whisk gently. Pour the batter into the prepared dish. Steam for 10-12 minutes, or until a toothpick inserted into the center comes out clean.

Prepare the Tempering

  • Heat 1 tablespoon of oil in a small pan. Add the mustard seeds and let them splutter. Add the curry leaves and green chilies; sauté for a few seconds until fragrant.

Finish and Serve

  • Pour the tempering evenly over the steamed dhokla. Let it cool slightly before cutting into squares. Serve warm and enjoy with coconut chutney or your favorite side dish.

Expert Tips for the Perfect Spinach & Oats Dhokla

  • For a smoother batter, blend the oats powder until very fine. Sieving the batter is also recommended.
  • Don't over-steam the dhokla; it can become rubbery. Check for doneness with a toothpick or skewer after 10 minutes.
  • Adjust the amount of green chilies according to your spice preference.
  • For a richer flavor, you can add a pinch of turmeric powder to the batter.
