Ingredients
 

For the Dhokla Batter

  • 1 ¾ cups cup Gram Flour besan
  • 1 cup cup Yogurt curd, plain, stirred
  • 1 ½ cups cup Water adjust for desired batter consistency
  • 1 tsp Chili Pepper finely chopped, green
  • 1 tsp Ginger paste
  • 1 ½ tsp Salt adjust to taste
  • 1 tsp Baking Soda or 1 tsp baking soda + 1 tbsp lemon juice
  • ½ tsp Turmeric haldi
  • 1 tbsp Oil vegetable or canola oil

Prepare the Batter

  • In a large bowl, whisk together the gram flour, yogurt, and water until you achieve a smooth, lump-free batter. The consistency should be slightly thicker than pancake batter. Let the batter rest, covered, for at least 4 hours, or preferably overnight, in the refrigerator.

Add Spices and Leaveners

  • After resting, add the green chilies, ginger paste, turmeric powder, and salt to the batter. Mix thoroughly.
  • In a separate small bowl, gently combine the baking soda (or Eno) and oil. Add this mixture to the batter and stir gently to combine. Do not overmix.

Steam the Dhokla

  • Grease a 7x11 inch baking dish or similar sized steamer-safe dish with oil. Pour the batter into the prepared dish.
  • Place the dish in a steamer and steam for approximately 10-12 minutes, or until a toothpick inserted into the center comes out clean. The dhokla should be set and springy to the touch.

Cool and Cut

  • Remove the dhokla from the steamer and let it cool slightly in the pan. Once cool enough to handle, cut the dhokla into bite-sized squares or diamonds.

Prepare the Tempering

  • Heat oil in a small pan over medium heat. Add the mustard seeds and let them splutter. Add the curry leaves and sauté for a few seconds until fragrant.

Garnish and Serve

  • Pour the tempering over the dhokla. Garnish with chopped coriander and slit green chilies.
  • Serve warm or at room temperature with chutney of your choice.

  • For extra fluffiness, add ½ teaspoon of baking powder along with the baking soda.
  • Don't overmix the batter once you add the leavening agent. Overmixing can make the dhokla tough.
