  • Coarsely grind the cooled roasted red rice using a blender or food processor. A coarse grind provides the best texture for the upma.
  • In a heavy-bottomed pan or pot, heat the cooking oil and 1 tablespoon of coconut oil over medium heat.
  • Add the mustard seeds to the hot oil. Once they begin to splutter, add the urad dal. Sauté until the dal turns golden brown.

  • Gradually add the coarsely ground red rice to the boiling water, stirring continuously to prevent lumps from forming. This ensures a smooth and even consistency.
  • Reduce the heat to low, cover the pan, and simmer for 8-10 minutes, or until the upma is cooked through and has absorbed most of the water.
  • Serve the Red Rice Upma hot, garnished with fresh coriander leaves or a dollop of ghee. Enjoy it with your favorite chutney or relish the simple flavors on their own.

Expert Tips

  • For a richer flavor, use freshly grated Parmesan cheese instead of pre-grated.
  • Adjust the cooking time depending on your oven and the thickness of the dish. Use a thermometer to ensure it reaches an internal temperature of 165°F (74°C).
  • Get creative with your toppings! Try adding crumbled bacon, chopped fresh herbs, or a drizzle of balsamic glaze before serving.

Storage Instructions

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven or microwave until warmed through.
