Preparing the Base

  • Heat olive oil in a wok or large pan. Add the tej patta and dry red chili. Sauté until fragrant.
  • Add the finely chopped onion and sauté until golden brown.
  • Add the red chili powder, turmeric powder, garam masala, and coriander powder. Stir well and cook for about 5 minutes, adding a splash of water to prevent burning.
  • Add the roughly chopped onions and tomatoes along with salt. Stir and cover the pan, allowing the tomatoes to soften and release their juices. Cook until the oil separates from the mixture.

Simmering the Curry

  • Add 3 cups of water and bring to a boil. Reduce heat and simmer until the curry thickens slightly.
  • Stir in the Ratlami sev. Simmer for about 1 minute, or until heated through. Be careful not to overcook the sev.

Serving

  • Garnish with fresh coriander leaves. Serve hot with chapati or roti.
