Batter Preparation
- Soak the millet flour, rolled oats, split chickpeas, and fenugreek seeds in 2 cups of water for at least 2 hours, or preferably overnight.
- After soaking, grind the mixture into a smooth batter using a blender. Add more water if necessary to achieve the right consistency for dosa batter. The batter should be slightly thicker than pancake batter.

- Let the batter ferment for at least 4-6 hours, or preferably overnight, in a warm place for optimal taste and texture.

- Lightly grease the pan with oil.
- Pour 1/4 cup of batter onto the hot pan and spread it thinly into a circle using the back of a spoon or a ladle.
- Cook for 2-3 minutes on each side, or until golden brown and crispy. Cover the pan with a lid to help the dosa cook evenly.
- Serve hot with your favorite accompaniments, such as sambar, chutney, or even a fried egg.
Recipe Notes
Expert Tips for the Perfect Dosa
- For a smoother batter: If you prefer a very smooth batter, strain the batter through a fine-mesh sieve before cooking.
- Don't overcrowd the pan: Cook dosas in batches to ensure even cooking and to avoid sticking.
- Adjust water content: The amount of water required may vary depending on the type of millet and oats used. Add water gradually until you reach the desired consistency.
- Experiment with toppings: Get creative with your toppings! Try adding grated vegetables, herbs, or spices to the batter or serve with your favorite chutneys and side dishes.
