  • 1/2 - 1 tsp Salt to taste
  • 2 tbsp Oil for cooking the dosas

Batter Preparation

  • Soak the millet flour, rolled oats, split chickpeas, and fenugreek seeds in 2 cups of water for at least 2 hours, or preferably overnight.
  • After soaking, grind the mixture into a smooth batter using a blender. Add more water if necessary to achieve the right consistency for dosa batter. The batter should be slightly thicker than pancake batter.
  • Transfer the batter to a bowl. Add salt to taste and mix well.
  • Let the batter ferment for at least 4-6 hours, or preferably overnight, in a warm place for optimal taste and texture.

Cooking the Dosas

  • Heat a non-stick pan or griddle over medium heat.
  • Lightly grease the pan with oil.
  • Pour 1/4 cup of batter onto the hot pan and spread it thinly into a circle using the back of a spoon or a ladle.
  • Cook for 2-3 minutes on each side, or until golden brown and crispy. Cover the pan with a lid to help the dosa cook evenly.
  • Serve hot with your favorite accompaniments, such as sambar, chutney, or even a fried egg.
