Ingredients
Dry Ingredients
- 1 cup Oat Flour
- 1/4 cup Almond Flour
- 1/3 cup Whole Wheat Flour whole
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
Wet Ingredients
- 1/4 cup Honey you can substitute with powdered sugar, but honey provides added health benefits.
- 1 tsp Vanilla Extract
- 2 tbsp Yogurt or greek yogurt for a tangier flavor.
- 1/4 cup Milk any kind of milk will work.
Instructions
Prepare the Dough
- Combine oat flour, almond flour, whole wheat flour, baking soda, and salt in a large bowl. In a separate bowl, whisk together honey, vanilla extract, yogurt, and milk. Add the wet ingredients to the dry ingredients and mix until a dough forms.
Chill the Dough
- Roll the dough into a ball, wrap it tightly in plastic wrap, and refrigerate for at least 45 minutes. This allows the flavors to meld and makes the dough easier to handle.
Preheat and Bake
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Roll out the chilled dough to about 1/4 inch thickness and use cookie cutters to shape the cookies. Alternatively, form small balls and slightly flatten them on the baking sheet.
Bake until Golden Brown
- Bake for 12-15 minutes, or until the edges are golden brown. Keep a close eye on them as ovens can vary. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Recipe Notes
Expert Tips for Perfect Oat Almond Cookies
- For a richer almond flavor, toast the almond flour in a dry pan over medium heat for a few minutes before adding it to the dough.
- If your dough is too sticky, add a tablespoon or two of oat flour until it reaches the desired consistency.
- Experiment with different types of honey for varying flavor profiles. Darker honeys will impart a more robust flavor.
- Store your cooled cookies in an airtight container at room temperature for up to 3 days or in the freezer for up to 2 months.
