Instructions
 

Prepare the Dough

  • Combine oat flour, almond flour, whole wheat flour, baking soda, and salt in a large bowl. In a separate bowl, whisk together honey, vanilla extract, yogurt, and milk. Add the wet ingredients to the dry ingredients and mix until a dough forms.

Chill the Dough

  • Roll the dough into a ball, wrap it tightly in plastic wrap, and refrigerate for at least 45 minutes. This allows the flavors to meld and makes the dough easier to handle.

Preheat and Bake

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Roll out the chilled dough to about 1/4 inch thickness and use cookie cutters to shape the cookies. Alternatively, form small balls and slightly flatten them on the baking sheet.
