Instructions

  • In a food processor or grinder, coarsely grind the peanuts and cashews. Set aside half of this mixture for coating the paneer rolls later.
  • In a mixing bowl, combine the grated paneer, rolled oats, caster sugar (or granulated sugar), half of the ground nut mixture, and ground cardamom. Mix well to ensure all ingredients are evenly distributed.
  • Shape the paneer mixture into small, bite-sized rolls. The mixture should hold its shape easily.
  • Spread the remaining ground nut mixture on a plate. Roll each paneer roll in the nut mixture, ensuring it's fully coated for added crunch and flavor.
  • Refrigerate the coated paneer rolls for at least 30 minutes to allow them to firm up. This will make them easier to handle and enhance their texture.
  • Garnish the chilled paneer rolls with a dollop of orange marmalade, chopped pistachios, and a sprinkle of dried rose petals for an elegant presentation and burst of flavor. Serve and enjoy!

Recipe Notes

Good To Know

  • You can use any dry fruits like almonds, walnuts, pistachios, etc.
  • Prefer using castor sugar; adjust the quantity to your taste.
  • For a festive touch, consider adding a little thandai powder.
  • For extra crunch and flavor, lightly toast the rolled oats and chopped nuts (peanuts, cashews, pistachios) in a dry pan before mixing them into the paneer mixture.
  • If you prefer a tangier note, substitute orange marmalade with finely chopped dried apricots or a spoonful of lemon zest.
  • To make the rolls vegan, replace paneer with firm tofu (pressed and crumbled) and use a vegan-friendly sweetener such as maple syrup or coconut sugar instead of castor sugar powder.
  • Once shaped, chill the rolls in the refrigerator for at least 30 minutes before serving to help them firm up.

Expert Tips

  • If using thandai powder, ensure it's fresh and fragrant for the best flavor.
  • Don't overmix the paneer mixture, as this can make the rolls dense.
  • For a visually appealing presentation, garnish the rolls with chopped nuts or dried fruits before serving.

Storage Instructions

  • Store leftover rolls in an airtight container in the refrigerator for up to 3 days.
