Instructions

Prepare the Mango

  • Wash and peel the mango. Cut into small, roughly 1/2 inch pieces. Set aside.

Make the Paneer Mixture

  • Crumble the paneer into a food processor. Add the sugar and cardamom powder. Blend until you have a smooth paste.

Cook the Filling

  • Transfer the paneer mixture to a heavy-bottomed non-stick pan. Cook over low heat, stirring frequently, until the mixture becomes slightly dry but still moist. This will take approximately 5-7 minutes.

Add Oats and Coconut

  • Stir in the roasted oats and desiccated coconut. Cook for another minute, until fragrant and well combined. Remove from heat and let the mixture cool completely.

Assemble the Boats

  • Once cooled, take small portions of the paneer mixture (about 1-1.5 tablespoons) and roll them into small balls. Flatten each ball into a small circle, like a mini chapati. Spread a small amount of the mango pieces onto one flattened circle, then top with another flattened circle, sealing the edges to create a boat shape. Repeat with the remaining mixture.

Chill and Serve

  • Refrigerate the paneer boats for at least 30 minutes to allow them to firm up. Cut each boat in half to reveal the delicious mango filling. Garnish with whipped cream and fresh mango slices before serving.

Recipe Notes

Expert Tips for Perfect Mango Paneer Boats

  • For the best flavor, use homemade chenna (Indian cottage cheese). If using store-bought paneer, ensure it is fresh and soft.
  • Roasting the oats before adding them to the paneer mixture enhances their flavor and creates a lovely crunch.
  • Don't overcook the paneer mixture. It should be slightly moist to maintain a soft texture.
  • For a richer flavor, you can add a teaspoon of ghee (clarified butter) while cooking the paneer mixture.
