Ingredients
For the Bitter Gourd Boats:
- 6 Bitter Gourd karela, medium-sized, chopped into boat shapes
- 1 tbsp Salt or to taste
- 1 tbsp Lemon Juice
For the Filling:
- 150 gm Mozzarella Cheese shredded or crumbled
- 1 cup Corn boiled or canned, sweet
- 1 tbsp Pizza Seasoning
- 0.5 tsp Chili Flakes or to taste, red
- 1 tsp Honey
- 1 Chili finely chopped, green
- 2 tbsp Coriander dhania, finely chopped
For Cooking:
- 8 tbsp Oil vegetable or canola
Instructions
Prepare the Bitter Gourd
- Wash the bitter gourds thoroughly and cut them lengthwise into boat shapes. Carefully scoop out the seeds and pulp.
Salt the Bitter Gourd
- Place the bitter gourd boats in a bowl and sprinkle generously with 1 tbsp salt. Let them sit for at least one hour to draw out excess bitterness. Rinse well with fresh water after this time.
Make the Filling
- In a mixing bowl, combine the mozzarella cheese, sweet corn, pizza seasoning, red chili flakes, honey, chopped green chili, and coriander. Mix well to ensure all ingredients are evenly distributed.
