Prepare the Kebab Mixture
- Combine the mashed potato, chopped spinach, peas, green chili ginger paste, coriander, mint leaves, cumin seeds, chaat masala, turmeric powder (optional), salt, breadcrumbs, and cornflour in a large bowl. Mix thoroughly until well combined.

- Divide the mixture into 12 equal portions. Shape each portion into a ball, then gently flatten it into a small patty. Place a small cashew nut on top of each patty (optional).
Shallow Fry the Kebabs
