Ingredients
Dry Ingredients
- 1/4 cup Semolina suji
- 1/4 cup Bajra Flour
- 1/4 cup Rice Flour
- 1 1/2 tsp Salt or to taste
Instructions
- In a mixing bowl, combine the semolina, bajra flour, rice flour, and salt.
- Whisk the dry ingredients together to remove any lumps.
- Gradually add water to the dry ingredients, whisking continuously to create a smooth batter. The batter should be thick but pourable, similar to a pancake batter consistency.
- Lightly grease an idly mold with oil. This prevents the idlis from sticking.
- Pour the batter into the greased idly mold.
- Steam the idlis for 10-15 minutes. The idlis are ready when they are light, fluffy, and a toothpick inserted comes out clean.
- Once cooked, allow the idlis to cool slightly before carefully removing them from the mold.
- Serve the healthy and flavorful idlis hot with sambhar, coconut chutney, or your preferred accompaniments.
Recipe Notes
Good To Know
- For extra fluffiness, add a tablespoon of yogurt or a squeeze of lemon juice to the batter and let it rest for 15–20 minutes before steaming; this will help the idlis rise and become softer without using yeast or fermentation.
- If you prefer a more colorful and nutrient-rich idly, fold in finely grated carrots, chopped spinach, or beetroot into the batter just before pouring it into the molds.
- To enhance flavor and texture, temper some mustard seeds, curry leaves, and a pinch of asafoetida in a teaspoon of oil, then mix this tadka into the batter before steaming.
- Leftover idlis can be cooled, sliced, and pan-toasted with a sprinkle of chaat masala or curry powder for a quick and tasty snack or lunchbox addition.
Expert Tips
- Use good quality urad dal and rice for the best results. Soaking them for the proper amount of time is crucial for soft and fluffy idlis.
- Grind the batter to a smooth consistency. A slightly coarse batter can result in dense idlis.
- Don't overfill the idli molds. Fill them about ¾ full to allow the idlis to rise properly.
Storage Instructions
- Store leftover idlis in an airtight container in the refrigerator for up to 3 days.
- You can also freeze them for up to a month. Thaw them overnight in the refrigerator before reheating.
