Ingredients
Dry Ingredients
- 2 cup Whole Wheat Flour whole
- 1 tsp Baking Soda
- 1/2 tsp Baking Powder
- 2 tsp Cinnamon adjust to taste
- 1 tsp Ginger ground
- 1/2 tsp Cloves ground
Wet Ingredients
- 3/4 cup Refined Vegetable Oil
- 1 cup Yogurt
- 1 cup Jaggery firmly packed; grated or finely chopped
- 10 Dates medjool or deglet noor dates recommended; pitted and roughly chopped
- 1/4 cup Raisins
- 1 cup Nuts walnuts, almonds, mixed, pecans – finely chopped; optional
- 1/2 cup Water as needed for desired batter consistency
Instructions
Preheat & Prepare
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
Soak Dates & Raisins
- Soak chopped dates and raisins in warm water for 15 minutes to soften.
Combine Dry Ingredients
- In a large bowl, whisk together whole wheat flour, baking soda, baking powder, cinnamon, ginger, and cloves. Set aside.
Prepare Wet Ingredients
- In a separate bowl, combine vegetable oil and yogurt. Melt the jaggery (either in a microwave or on the stovetop) until smooth and stir into the oil and yogurt mixture until well combined.
Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Add Dates, Raisins, and Nuts
- Drain the soaked dates and raisins and add them to the batter along with the chopped nuts. Add water, a tablespoon at a time, if the batter is too thick. The batter should be slightly thick but pourable.
