Ingredients
For the Rabri
- 1 ltr Milk full-fat
- 3 tbsp Coconut Sugar organic
- 1/4 tsp Cardamom Powder ground cardamom (elaichi)
For the Sugar Syrup
- 1/2 cup Coconut Sugar organic
- 1/4 cup Water
Instructions
Preparing the Rabri
- Simmer 1 liter of full-fat milk in a thick-bottomed pan until reduced and slightly thickened. This will take approximately 45 minutes to 1 hour over low heat. Stir frequently, scraping the sides and bottom to prevent burning. Add 3 tablespoons of organic coconut sugar and 1/4 teaspoon of cardamom powder towards the end. Continue to simmer until the desired creamy consistency is reached.
Preparing the Bread
- Remove the crusts from 6 slices of brown bread. If using a doughnut cutter, cut the bread into rounds; otherwise, cut into squares or rectangles. Gently toast the bread slices in 3 tablespoons of ghee until lightly golden brown on both sides. Set aside on paper towels to drain excess ghee.
Making the Sugar Syrup
- In a small saucepan, combine 1/2 cup organic coconut sugar and 1/4 cup water. Cook over low heat, stirring occasionally, until a one-thread consistency is reached (a thin strand forms when lifted with a spoon). Remove from heat and stir in 1/4 teaspoon of cardamom powder.
Assembling the Shahi Tukra
- Dip the toasted bread slices into the warm coconut sugar syrup, ensuring they are evenly coated. Arrange the soaked bread slices neatly in a serving dish. Pour the prepared rabri evenly over the bread slices. Garnish with fried almonds and cashews.
