- 1.5 cup Rolled Oats use quick-cooking or old-fashioned rolled oats, finely ground in a food processor for best results.
- 1 cup Sugar powdered
- 3 tbsp Cocoa Powder unsweetened cocoa powder is recommended.
- 1 tbsp Baking Powder
- 1.5 tsp Salt
Wet Ingredients
- 1 cup Butter cold, unsalted, unsalted butter is best for this recipe.
- 3 Large Eggs
- 1 tsp Vanilla Extract
- 2 tbsp Water lukewarm water to activate the cocoa powder.
Optional Mix-ins
- 1/2 cup Chocolate Chips
- 1/2 cup Walnuts chopped walnuts or other nuts (optional)
Instructions
Prepare the Oat Flour
- Grind rolled oats into a fine powder using a food processor or blender.
Combine Dry Ingredients
- In a large bowl, whisk together the powdered oats, powdered sugar, cocoa powder, baking powder, and salt.
Combine Wet Ingredients
- In a separate bowl, cream together the cold butter and powdered sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
