Ingredients
For the Paratha Noodles
- 2 cup Whole Wheat Flour whole
- 1/2 tsp Salt
- 1 cup Water
For the Chicken and Sauce
- 250 gm Chicken Breast cut into bite-sized pieces
- 1 Tbsp Yogurt (dairy or plant-based)
- 1/2 tsp Chili Powder
- 1/4 tsp Garam Masala
- 1/4 tsp Chinese Five Spice optional
- 1/2 tsp Salt or to taste
Instructions
- In a large bowl, combine the whole wheat flour and salt. Gradually add water, mixing until a smooth dough forms. Knead for 5-7 minutes until elastic. Cover and let rest for 30 minutes. This allows the gluten to relax, resulting in softer parathas.
- Divide the dough into small portions. Roll each portion thinly into a circle. Cut each circle into thin strips, resembling noodles.
- Steam the paratha noodles for 10-15 minutes until cooked through. Set aside.
- In a pot, bring 1 cup of water to a boil. Add the chicken breast pieces and boil for 10 minutes, or until cooked through. Remove the chicken and shred it.
- Heat the vegetable oil in a large pan or wok over medium heat. Add the chopped baby corn, carrot, green chilies, and cashews. Sauté for 5-7 minutes, until the vegetables are slightly softened.
- Add the shredded chicken, chili powder, garam masala, Chinese five-spice (if using), and salt to the pan. Stir well to combine.
- Add the yogurt and chopped tomato to the pan. Stir to create a light sauce. Cook for another 2-3 minutes, allowing the flavors to meld.
- Add the steamed paratha noodles to the pan and gently toss to coat them in the sauce. Cover the pan and cook for a few minutes to heat through. This allows the noodles to absorb the flavorful sauce.
- Serve the Chicken & Veggie Paratha Noodles hot, garnished with fresh herbs if desired.
