Preparation

  • Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Combining Wet Ingredients

  • Dissolve the baking soda in the boiling water and set aside.
  • In a small saucepan over medium heat, melt the butter. Stir in the liquid jaggery until melted and smooth. Remove from heat and immediately stir in the dissolved baking soda mixture. Mix thoroughly until well combined.

Combining Dry Ingredients

  • In a large bowl, combine the rolled oats, whole wheat flour, desiccated coconut, and cane sugar. Mix well to ensure even distribution.

Assembling and Baking

  • Pour the wet ingredients into the bowl with the dry ingredients. Mix gently until just combined. Do not overmix.
  • Roll the mixture into small balls (approximately 1-inch diameter). Place them onto the prepared baking tray, leaving some space between each biscuit. Gently flatten each ball slightly with the palm of your hand.
  • Bake for 15-18 minutes, or until the bottoms are light golden brown. Keep a close eye on them towards the end of baking to prevent burning.

Cooling and Serving

  • Remove the biscuits from the oven and let them cool completely on the baking tray before transferring them to a wire rack to cool completely. Enjoy!
