Ingredients

- 1 cup Cherry Tomatoes about 1 pint, washed and halved
- 1 tbsp Mustard Oil Or Vegetable Oil
- 1/2 tsp Salt
- 1/4 tsp Pepper black, freshly ground, preferred
For the Spice Blend
- 1 tbsp Mustard Seeds also known as rai
- 3/4 tsp Fennel Seeds also known as saunf
- 1/4 tsp Carom Seeds also known as ajwain
For the Pickle
- 2 tbsp Mustard Oil Or Vegetable Oil
- 2 tbsp Mint Leaves finely chopped, fresh
- 1 tbsp Or Apple Cider Vinegar white
- 1 tsp Sugar
- 1 tsp Salt or to taste
Instructions
Prepare the Tomatoes
- Toss halved cherry tomatoes with 1 tbsp oil, 1/2 tsp salt, and 1/4 tsp black pepper in a bowl.
- Grill the tomatoes on a hot grill pan or under a broiler for 5-7 minutes, until slightly charred and softened.
Make the Spice Blend
- Dry roast 1 tbsp mustard seeds, 3/4 tsp fennel seeds, and 1/4 tsp carom seeds in a dry pan over low heat for 1-2 minutes, until fragrant.
- Let the seeds cool completely, then coarsely grind them using a blender or spice grinder.
Combine and Cook
- Heat the remaining 2 tbsp oil in a pan. Add the grilled tomatoes, remaining salt (if needed), the ground spice mixture, chopped mint, sugar, and vinegar.
- Mix well and cook for 1-2 minutes. Remove from heat.
Cool and Store
- Let the pickle cool completely before transferring it to a clean, dry, airtight container. Store in the refrigerator.
