  • 250 gm Peas fresh or frozen, green
  • 1 Onion large, finely chopped
  • 2 Tomato finely chopped, medium
  • 1 inch Ginger grated
  • 4-5 Garlic cloves, minced

Prepare the Onion-Tomato Base

  • Heat 1/2 tablespoon of oil in a pan. Sauté the chopped onions until golden brown. Add the grated ginger and minced garlic; sauté for 2 minutes. Add the chopped tomatoes and cook until softened and pulpy.

Make the Cashew Paste

  • Once cooled, add the cashews to the onion-tomato mixture. Blend the mixture into a smooth paste using a blender or food processor. Set aside.

Sauté Spices and Peas

  • Heat the remaining oil and butter (if using) in a wok or large pan. Add cumin seeds, cinnamon sticks, and cloves. Once the cumin seeds begin to splutter, add the green peas and green chili. Stir frequently for 3-4 minutes.

Add Spices and Paste

  • Add the red chili powder, coriander powder, and garam masala. Stir well and cook for 1 minute. Add the cashew paste and mix thoroughly.

Simmer and Finish

  • Cover the pan and cook over low heat for 7-8 minutes, or until the peas are tender. Add water as needed to maintain moisture. Stir in the dried fenugreek leaves and salt. Continue cooking until the sauce slightly thickens and you've reached your desired consistency. Serve hot!
