  • Prepare the Gotu Kola paste by blending fresh Gotu Kola leaves with green chilies and cumin seeds. Garlic can also be added for extra flavor. Set aside.

  • Heat the oil in a pan over medium heat. Add the carom seeds and dried red chili. Sauté for a few seconds until fragrant.
  • Add the cubed pumpkin to the pan. Sprinkle with turmeric powder, coriander powder, chili powder, and salt. Stir well to coat the pumpkin evenly.

  • Cook the pumpkin until tender, stirring occasionally. This allows the pumpkin to soften and absorb the flavors of the spices.
  • Add the roasted chickpeas, chopped fresh coconut, and prepared Gotu Kola paste to the pan. If you don't have Gotu Kola paste, you can add a few chopped fresh leaves.
