Ingredients
Dry Ingredients
- 0.75 cup Sunflower Seed Flour
- 3 Tbsp Rice Flour black
- 0.25 tsp Baking Soda
- 3.5 Tbsp Cocoa Powder
- 1 pinch Cardamom Powder
Wet Ingredients
- 1 Tbsp Flavorless Oil
- 1 Tbsp Coconut Oil
- 0.25 cup Sugar Syrup
- Tbsp Milk as needed
Topping
- 1.5 Tbsp Desiccated Coconut
Instructions
- Grind the room-temperature, skinless sunflower seeds into a fine powder using a food processor or grinder.
- Soak black rice in water overnight, then sun-dry and grind into a fine powder. Add the black rice flour to the sunflower seed flour.
- Add the baking soda and cocoa powder to the flour mixture. Whisk thoroughly to combine.
- Make a well in the center of the dry ingredients. Add the flavorless oil, coconut oil, and sugar syrup to the well.
- Mix the wet and dry ingredients together until a dough forms. Add milk, a tablespoon at a time, if needed, to achieve a pliable dough.
- Roll the dough into small balls. Place the balls on a parchment-lined baking sheet and gently flatten them with your fingers.
- Preheat the oven to 350°F (175°C). Bake the brokiees for 12-15 minutes, or until the edges are firm and slightly golden.
- Remove the brokiees from the oven and let them cool completely on the baking sheet. This allows them to crisp up further. Sprinkle with desiccated coconut.
- Store the cooled brokiees in an airtight container to maintain their freshness.
Recipe Notes
Good To Know
- Milk is just to bind, so don’t add too much.
- For extra crunch and a nutty flavor boost, fold in a handful of lightly toasted sunflower seeds or chopped nuts just before baking.
- If you want a richer chocolate experience, swirl in a few dark chocolate chunks or cacao nibs with the batter; these will melt slightly but retain delightful texture.
- To make these vegan-friendly, ensure your sugar syrup is plant-based and use a flaxseed or chia egg substitute (1 tablespoon ground flaxseed/chia + 2.5 tablespoons water per egg) if the recipe calls for eggs.
Expert Tips
- Don't overmix the batter, as this can lead to tough brokiees. Mix until just combined.
- For perfectly portioned brokiees, use a cookie scoop or two spoons to drop the batter onto the baking sheet.
- Line your baking sheet with parchment paper for easy cleanup and to prevent sticking.
Storage Instructions
- These brokiees store well in an airtight container at room temperature for up to three days.
- To refresh their texture, simply pop them in a preheated oven at 160°C (320°F) for 3–4 minutes before serving.
