Prepare the Dough

  • Combine flour, ghee, baking powder, and salt in a bowl. Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes, then cover and let rest for 15 minutes.

Make the Filling

  • Heat mawa in a pan over low heat, stirring constantly until it melts and becomes loose. Add powdered sugar, milk powder, cardamom powder, raisins, and chironji. Mix well and remove from heat. Let cool slightly.

Assemble the Gujias

  • Roll out the dough thinly. Cut into small circles. Place a spoonful of the filling in the center of each circle. Shape the dough into fish and bird shapes, sealing the edges carefully. Press the edges to ensure they are sealed tightly.

Bake and Serve

  • Preheat oven to 150°C (300°F). Brush the gujias with ghee. Bake for 15-20 minutes, or until golden brown and crisp. Cool completely before serving. Enjoy!
