  • Blanch fresh spinach leaves and puree until smooth.
  • In a small bowl, dissolve sugar in 2 tablespoons of warm milk (105-115°F). Sprinkle yeast over the milk mixture and let stand for 5 minutes until foamy. This activates the yeast and ensures a good rise.
  • In a large bowl, sift all-purpose flour and salt together.
  • In a separate bowl, whisk together yogurt, the remaining warm milk, oil, and spinach puree.
  • Pour the wet ingredients into the dry ingredients and mix until a shaggy dough forms.
  • Turn the dough out onto a lightly floured surface and knead for 10-12 minutes until smooth and elastic. The dough may be slightly sticky. Add additional flour, 1 tablespoon at a time, if needed.
  • Lightly grease a large bowl with oil. Place the dough in the bowl, turning to coat. Cover the bowl with plastic wrap and let rise in a warm place for 1 1/2 hours, or until doubled in size.
  • Punch down the risen dough to release the air. Gently knead for a minute.

  • Sprinkle sesame seeds over the buns and gently press them in.

  • Brush the buns with melted butter and a little milk. This will give them a beautiful golden crust.
  • Preheat oven to 350°F (175°C). Bake for 12-15 minutes, or until golden brown. If the tops brown too quickly, tent loosely with foil.
