Prepare the Dough

  • In a small bowl, combine lukewarm water, sugar, salt, baking powder, and yeast. Mix with a fork until foamy.

Combine Dough Ingredients

  • In a large bowl, add all-purpose flour. Gradually add the yeast mixture, mixing well. Knead the dough until smooth and elastic, adding more lukewarm water as needed.

First Rise

  • Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1-2 hours, or until doubled in size.

Prepare the Chicken Filling

  • Heat vegetable oil in a pan over medium heat. Add minced garlic and chopped onion; sauté until softened.

Cook the Filling

  • Add ground chicken, black pepper, salt, soy sauce, and oyster sauce. Cook, stirring occasionally, until the chicken is cooked through. Stir in chopped scallions.

Second Rise & Shape the Buns

  • Gently knead the risen dough for 5 minutes. Divide it into 8 equal portions. Roll each portion into an 8cm diameter circle.

Assemble the Buns

  • Place about 2 tablespoons of chicken filling in the center of each circle. Fold the dough over to form a half-moon shape, pinching the edges to seal.

Steam the Buns

  • Bring 2 cups of water to a boil in a steamer or a pot with a steamer basket. Arrange the buns, seam-side down, on the steamer basket. Cover and steam for 10-12 minutes, or until cooked through.

Serve

  • Remove the buns from the steamer and serve hot with soy sauce.
