Ingredients
For the Dough
- 3 cup All-Purpose Flour
- 2 1/4 tsp Yeast active, dry
- 1 1/2 tsp Baking Powder
- 2 tbsp Sugar castor sugar can be substituted, granulated
- 1 tsp Salt
- 1 cup + 2 tablespoons Water adjust as needed for dough consistency, approximately
For the Chicken Filling
- 1 1/2 cup Chicken ground, mince
- 2 cloves Garlic minced or use 2 teaspoons of garlic paste
- 1/2 cup Onion finely chopped, or use 1/2 cup onion paste
- 1 tsp Pepper black, ground
- 1 tbsp Soy Sauce
- 1 tbsp Oyster Sauce
- 1 bunch Scallions chopped, spring onions
- 1/2 tsp Salt for seasoning the filling
- 1 tbsp Vegetable Oil for sautéing
Instructions
Prepare the Dough
- In a small bowl, combine lukewarm water, sugar, salt, baking powder, and yeast. Mix with a fork until foamy.
Combine Dough Ingredients
- In a large bowl, add all-purpose flour. Gradually add the yeast mixture, mixing well. Knead the dough until smooth and elastic, adding more lukewarm water as needed.
First Rise
- Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1-2 hours, or until doubled in size.
Prepare the Chicken Filling
- Heat vegetable oil in a pan over medium heat. Add minced garlic and chopped onion; sauté until softened.
Cook the Filling
- Add ground chicken, black pepper, salt, soy sauce, and oyster sauce. Cook, stirring occasionally, until the chicken is cooked through. Stir in chopped scallions.
Second Rise & Shape the Buns
- Gently knead the risen dough for 5 minutes. Divide it into 8 equal portions. Roll each portion into an 8cm diameter circle.
Assemble the Buns
- Place about 2 tablespoons of chicken filling in the center of each circle. Fold the dough over to form a half-moon shape, pinching the edges to seal.
Steam the Buns
- Bring 2 cups of water to a boil in a steamer or a pot with a steamer basket. Arrange the buns, seam-side down, on the steamer basket. Cover and steam for 10-12 minutes, or until cooked through.
Serve
- Remove the buns from the steamer and serve hot with soy sauce.
