Ingredients
Dry Ingredients
- 2 cup Whole Wheat Flour whole
- 2 tsp Yeast instant
- 4 tbsp Sugar optional, adjust to taste, granulated
- 1/2 tsp Salt or to taste
Wet Ingredients
- 2 cup Amaranth Leaves fresh, lightly packed
- 2 tbsp Butter softened, unsalted
- 1/2 cup Water approximately, more or less as needed for dough consistency
- 1/4 cup Water for blanching amaranth
- 1 tbsp Butter for greasing bowl and muffin tin
Instructions
Prepare the Amaranth
- Wash amaranth leaves thoroughly. Blanch in boiling water for 1 minute, then immediately plunge into ice water to stop cooking. Drain well.
Make the Amaranth Puree
- Puree the blanched amaranth leaves in a food processor until smooth.
Activate Yeast (If Using Instant Yeast)
- In a small bowl, combine 1/4 cup of warm water with 1 tablespoon of sugar from the recipe. Sprinkle the yeast over the water and let stand for 5-10 minutes until foamy. If using active dry yeast, follow package instructions.
Combine Dry Ingredients
- In a large bowl, whisk together the whole wheat flour, remaining sugar, and salt.
Combine Wet and Dry Ingredients
- Add the amaranth puree to the dry ingredients. If using instant yeast, add the yeast mixture as well. Mix with a spoon or your hands until just combined.
Knead the Dough
- Gradually add the warm water, kneading until a soft and smooth dough forms (about 2-3 minutes). Add more water if needed.
Add Butter
- Incorporate the softened butter into the dough, kneading until fully absorbed (another 2-3 minutes).
First Rise
- Place the dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
Shape the Rose Buns
- Punch down the dough to release air. Divide into 32 equal-sized balls. On a lightly floured surface, roll each ball into a small circle. Arrange four circles overlapping slightly to form a flower shape. Roll up tightly like a swiss roll, tucking in the ends. Gently open the roll to resemble a rose.
Second Rise & Bake
- Grease a muffin tin. Place the rose buns in the tin. Brush with melted butter. Let rest for 10 minutes. Preheat oven to 350°F (175°C). Bake for 18-22 minutes, or until golden brown. Keep an eye on them to prevent burning.

Expert Tips for Perfect Amaranth Rose Buns
- For a sweeter bun, increase the sugar to 6 tablespoons.
- If you don't have amaranth leaves, you can substitute spinach or another leafy green, but the flavor will be different.
- Ensure your yeast is fresh for optimal rise. Check the expiration date.
- Don't overbake the buns. Start checking for doneness around 18 minutes.
