Ingredients
Dough
- 1 cup Whole Wheat Flour whole
- 1 1/2 tsp Salt or to taste
- 1 cup Potatoes mashed
- 2 tbsp Oil plus more for cooking
Filling
- 1 cup Onion chopped
- 1-2 Chillies chopped, green
- 1 tsp Cumin Seeds roasted
- 1/2 tsp Chili Flakes red
- 1/2 tsp Mango Powder dry
- 1/4 cup Coriander chopped, fresh
Instructions
- In a large bowl, combine the whole wheat flour, salt, and mashed potatoes. Gradually add the oil and knead until a smooth, pliable dough forms. This step develops the gluten in the flour, resulting in a soft paratha.
- Heat oil in a pan over medium-high heat. Add the chopped onions and sauté until translucent, softening their texture and enhancing their sweetness. Add the green chilies, roasted cumin seeds, and red chili flakes. Sauté for another minute until fragrant.
- Remove the pan from the heat and stir in the dry mango powder, salt, and fresh coriander. This allows the spices to retain their vibrant flavors without burning.
- Divide the dough into equal-sized portions. Roll each portion into a thin circle. Place a spoonful of the onion filling in the center of each circle.
- Carefully bring the edges of the dough together to enclose the filling completely, forming a ball. Gently flatten the ball and roll it out again into a thin circle, ensuring the filling remains sealed inside.
- Heat a flat griddle or tawa over medium heat. Cook the paratha for a few minutes per side, pressing gently with a spatula, until golden brown spots appear and the paratha is cooked through. Adding a little oil to the tawa while cooking ensures a crispy and flavorful paratha.
- Serve hot with your favorite accompaniments, such as yogurt or a side of cooked potatoes.
Recipe Notes
Good To Know
- This paratha has a uniquely soft and tasty texture.
- For extra crunch and flavor, add a tablespoon of finely chopped raw peanuts or roasted chana dal to the stuffing before sealing the parathas.
- To prevent the onion filling from releasing too much moisture, sprinkle the chopped onions with salt and let them sit for 5 minutes. Gently squeeze out the excess water before mixing with other stuffing ingredients.
- For a smoky flavor, cook the parathas on a cast-iron tawa and finish each one with a quick char over an open flame using tongs.
Expert Tips
- For even cooking, ensure your dough is rolled out to a uniform thickness.
- Use a generous amount of ghee or oil when cooking for a crispy and flavorful paratha.
- Experiment with different fillings like spiced potatoes, paneer, or mixed vegetables.
Storage Instructions
- Leftover parathas can be wrapped in foil and reheated directly over a gas flame or in a hot pan to restore their crispness.
